We offer single-varietal and multi-varietal oils, designed to express the purity and complexity of Apulian olives. Alongside these, a range of flavoured oils with a black cap: delicate, intense, surprising. Its flavour envelops, reminiscent of the serenity of a lit fireplace. Our EVOO can only be conjugated with the verb to taste, in every tense, in every way, finite and infinite, pronounced by the mouth, the tongue, the lips which is music that leads back to the knowledge of the farmers, to the water and the sun of Puglia.

How is it produced?

Phase 1
Phase 1

Collection

The harvest is the first gesture of respect towards the oil that will be. The olives are carefully selected at their optimal ripeness to preserve their integrity, aromatic profile, and nutritional value. Each drupe is a promise that we carefully escort to the mill.

Stage 2
Stage 2

Weighing

Once they arrive at the oil mill, the olives are precisely weighed. This is a fundamental step to ensure traceability, yield control, and transparency at every stage of the production process.

Leaf removal and washing

The process begins with olives that have been carefully destemmed and de-branched, then washed using modern equipment that treats each individual drupe as if it were a promise. The cleaning takes place without mechanical stress, eliminating residues and impurities before the actual processing.

Crushing

Olives are pressed with precision. We use cutting-edge technological equipment by Pieralisi, guarantee of qualitative and quantitative excellence at every stage.
Our crusher, equipped with a double motor and an exclusive counter-rotating grid, gently crushes the olive, minimising mechanical stress and peroxide formation. The carefully designed shape of the hammers and grids allows for sharp-edged crushing, essential for effective and uncompromising malaxation.

Beneath the breaker, a single-screw pump activates a pressurised air and water cleaning system: every pipe and every passage is thoroughly sanitised, guaranteeing the complete absence of cross-contamination between batches. Here, cleaning is not a detail, but a form of respect.

Granulation

The resulting paste is rested in individual, hermetically sealed kneaders to protect it from oxygen, the invisible enemy of quality. At a constant temperature between 18 and 20°C, it is slowly mixed by helical blades which, with controlled and harmonious movements, promote the natural union of micro-oil droplets.

Cold extraction

The oil is obtained through a two-and-a-half-phase cold extraction using a centrifuge, an innovative system that reduces water addition, respects the raw material, and enhances every olive. Thanks to this centrifugation, we obtain an oil that is richer in nutrients, more fragrant, and has an authentic taste, capable of conveying the quality of the processing from the very first taste.

Filtering

To obtain an excellent oil, we use a cutting-edge filter, designed to completely eliminate impurities and micro-water particles still suspended after extraction. This is a fundamental step that makes the oil purer, more stable, and perfectly preservable over time.

Preservation

After extraction, the oil is stored in stainless steel silos at a controlled temperature. The environment is protected by an inert nitrogen gas blanket, which prevents contact with oxygen and allows the oil to retain its freshness, stability, and quality over time.

Bottling

When the time is right, we bottle it with the same care we used to produce it. Bottling only takes place when there are active orders, so the oil can remain longer in its ideal environment, protected and stable, preserving its freshness and sensory characteristics.
Only when necessary, we prepare it with care in elegant bottles or in ceramics from Laterza, transforming each piece into a gift. Because for us, giving oil is like giving a memory that smells of home.
